For our next Irish Chamber’s sponsor series, we were delighted to have Chef Andrew Walsh interviewed by Kate Simpson, President of the Irish Chamber of Commerce Singapore. Andrew is Chef and owner of four restaurants in Singapore – Cure, Catfish, Butcher Boy, Club Street Wine Room and has a restaurant partnership in Malaysia called Ember Beach Club with the exclusive One&Only resort.
Hailing from the idyliic village of Breaffy near County Mayo in Ireland, Andrew has worked alongside famous chefs at Michelin starred restaurants in Dublin, New York and London. His new restaurant Cure was just recently awarded a one MICHELIN star, where Andrew and his team are doing an exciting take on new Irish cuisine and showcasing the best of Irish ingredients.
Andrew shares with us his journey from Ireland to Singapore, to taking the leap of faith in setting up on his own, adapting to the challenges that many lockdowns presented and his ethos of team spirit - ‘We are all in the gutter, but some of us are looking at the stars’
